My mom was a great old-fashioned, southern cook! She never owned measuring cups or measuring spoons! She would use her own coffee cup (hopefully clean) and any spoon she found in the drawer. Quite often, she just poured the ingredient in the palm of her hand & said “yep, that looks about right!”
I loved my mom’s cooking! I remember calling her from Texas at Thanksgiving asking her a million questions about how to make dressing, sweet potatoes, her delicious peach cobbler, etc! It was to be my First Thanksgiving Feast coming out of my Houston kitchen! Nervous? You bet!
My mom said with full confidence in me & with her charming Tennessee accent, “Well, Kid, get out your cast iron skillet for the cornbread!” What? A cast iron skillet! I don’t own one. “What”? She exclaimed! “Kid, everyone has a cast iron skillet”!
My Mom’s Peach Cobbler was THE BEST! Her homemade dough (no Pillsbury frozen back then) was not picture perfect, but the best cobbler I’ve ever tasted! One of these days, Kristin & I will video me making Mom’s Peach Cobbler. So, please stay tuned!
