I think you’ll get a kick out of today’s video! My guest chef is so special and was super easy to be with! Kristin & I had a blast making this video, so I hope you’ll enjoy watching it. Blake did a great job whisking the eggs & was my main taste tester. He gave our frittata 2 thumbs up!
Friends, frittatas are one of the easiest egg dishes to make! It’s basically a baked omelette that can be changed up every time you make it. Use your fave meats, veggies and cheese and you’ll have a great meal that works for breakfast, lunch or dinner!
Spoiler Alert: I’ve got to say having the Blake Cut Out in the corner of my kitchen has been so much fun. However, at first our precious Abby wasn’t sure of this newcomer. She approached “Blake” with a low growl, which was pretty doggone funny! Blake has become part of our family! Even Marco & Keira walk by and say “Hi Blake”!
So, until the “Real Blake Shelton” comes to visit Connie’s Truffle House, we are enjoying our new friend in our home. He’s easy to please and never makes a mess! LOL!

What you need:
- 8 eggs, whisked
- 1 cup heavy organic whipping cream
- 5 slices thick bacon, cut into 1 inch pieces and fried
- 1-2 tbsps. butter
- 1 “bunch” green onions
- 1 cup yellow or red onions, chopped
- 2 cups mushrooms, sliced
- 2 cups spinach
- 1 cup cherry tomatoes or 1 cup mixed harvest colored baby tomatoes
- 1 cup Gruyere with a little bit of Havarti, shredded
- salt & pepper to taste
- Fresh Basil, chopped
How to make it:
- Preheat oven to 375
- Fry bacon in a cast iron or heavy duty oven-proof skillet until crispy, remove from pan & drain
- Whisk eggs until light in color and frothy
- Gradually whisk in cream, salt & pepper (to taste)
- In 2-3 tbsps of bacon grease, sauté onions until tender (I also add butter!)
- Continue sautéing mushrooms & spinach
- Add bacon & basil
- Whisk the frothy egg mixture & pour over all the yummies in the skillet
- Top with tomatoes and lightly tap into egg mixture for great color
- Sprinkle shredded cheese on top.
- Cook on the stove top for 2-3 minutes until eggs start to “set”
- Transfer to preheated oven for 10-15 minutes until eggs aren’t runny in the middle
Serving ideas:
- Serve straight from the skillet or slide onto a serving platter garnished with fresh basil leaves
- For great taste & color, garnish with sour cream, guacamole or sliced avocados & salsa
For a Vegetarian Frittata:
Omit bacon, obviously. Steamed broccoli is awesome in a frittata. Also, a potato and asparagus frittata is delicious! Check out the leftovers in the frig for great frittata ingredients.
