Connie’s White Chocolate 5 Nuggets of Wisdom

White Chocolate deserves more respect!   Okay…it’s not Dark Chocolate, but it can be delicious on its own, if you buy the right white chocolate.

Did you know.. White chocolate does not have caffeine!  YAY!  Or, maybe NOT?

Below are 5 Nerdy Nuggets of Wisdom to help you make the perfect White Chocolate Truffle! You’ll find the exact measurements of chocolate explained in #5 in the video below. Happy Truffle Making!

1.   White chocolate has to have at least 20% cocoa butter to even be considered chocolate. A high quality white chocolate bar will have between 32 – 39% cocoa butter.

2.   A white chocolate bar with a cocoa butter percentage over 32% (plus or minus) may be challenging when it’s time for the ganache to “set up”.  This is important since you need ganache that will be easy to make into truffle balls.

3.   Making white chocolate truffles can be challenging and requires choosing the right white chocolate for the ganache.

4.   Over the years, I’ve made dozens of white chocolate truffles!  Each time, I would change up my recipe to include a different white chocolate bar to find that decadent flavor and smooth texture of my white chocolate dreams! 

5.   I found Lindt and Milk Boy melted with heavy organic whipping cream, simmering over a “Bain Marie”, is a great combination for the white chocolate ganache!
