Ingredients
Dry Ingredients
3
cups
gluten free rolled oats
(Trader Joe's are my go-to)
1
cup
brown sugar,
packed
2
tsps
cinnamon
1 ½
tsps
baking powder
(NOT baking soda)
1
tsp
salt
1
cup
or more of chopped pecans
(walnuts worked perfectly, as well)
1
cup
dried cranberries
(add blueberries, raisins, whatever you love!)
Wet Ingredients
1 ½
cups
milk
(I used 2% milk)
½
cup
heavy organic whipping cream
3 ½
tbsps
unsalted butter,
melted
2
tbsps
pure maple syrup
2
eggs,
at room temp, whisked
1 ½
tsp
vanilla extract

2 Granny Smith apples,
peeled & cut into small cubes
Instructions
DIRECTIONS TO SAUTEE APPLES:
Preheat oven to 350
Peel & cube 2 Granny Smith apples (approx 4 cups)
Melt 2 tbsps. unsalted butter
Add apples and stir
Add 2 tbsps. brown sugar
Add 1 tsp. cinnamon
HOW TO MAKE IT:
Butter 11- inch baking dish
Layer cubed apples on bottom of dish
Combine dry ingredients in a bowl; stir to mix
Whisk eggs in another bowl & add rest of wet ingredients, except butter
Add milk mixture to oats; stir in butter
Pour the mixture over the cubed apples
Add more chopped pecans to the top of the mixture, optional
Bake at 350 for approx 35-40 minutes until the oatmeal is set and golden brown.
Let set a couple of minutes. Serve with a drizzle of warm maple syrup, of course, this is optional, but highly recommended!
Just a reminder, this is not your low cal oatmeal, but you can certainly substitute ingredients. Fat free milk, honey, agave, etc.
