Connie’s 8 Pancake Tips

I must confess most of what I’ve learned in the kitchen has been the result of making lots of mistakes!

Here are 8 tips I’ve learned over many years of making pancakes!  Let me know if this has been helpful.  Also, I would LOVE to hear about your favorite pancake tips!

1.  If you like using buttermilk in your pancakes, try to use REAL buttermilk.  If you don’t have it on hand,  “make” your own by putting a tablespoon of lemon juice in a cup of milk.  Let it stand for 5 minutes.

2.   When whisking dry ingredients, I love adding a tablespoon of sugar.  If you prefer your sweetness in the toppings, no problem.  I love the sweet taste IN the batter AND on top of the pancakes!  LOL!

3.   Make a well in the bowl with the dry ingredients.   Pour the wet ingredients into the well and stir with a spatula.  The key to light & fluffy pancakes is not to overmix.  Using an electric mixer will result in tough pancakes.

4.  Pancake batter SHOULD BE lumpy!   If you see lumps and no streaks of flour, you’re good to go!  .

5.   If you have time, separate the egg yolks & whites.   Whisk the whites till stiff.  Fold in the egg whites after stirring the batter.  This makes a light & fluffy pancake. YUM!

6.   Use a griddle if making lots of pancakes.  They’ll cook more evenly.

7.   You can use oil or a cooking spray to coat the cooking surface.  I prefer using a cold stick of butter.

8.   I like using a large ice cream scoop for equal amounts of batter on the griddle, which helps the pancakes cook evenly.
