WHAT A BLAST!

My first “official” guests to “Connie’s Truffle House” were Natalie, Landon & Elin Thigpen.   We had so much fun making one of my very favorite treats – Avalanches!   This yummy confection is a delicious and easy treat to make with kiddos & g’kiddos!  You don’t have to be precise in measurements, you don’t bake it &  it’s gluten free.   It’s a great gift for teachers, friends and whoever likes sweets!

Kids (and yours truly) love making them for the holidays!   You know how M&M’s come in all the holiday colors?  That’s perfect for avalanches.  I use fall colors  for Halloween & Thanksgiving,  red, pink & white for Valentine’s… well, I think you get the picture!

The basic ingredients are: white chocolate chips, marshmallows, peanut butter & rice krispies.  But, check out the recipe below to see the complete list that turn these into mouthwatering bites of Joy!

CONNIE’S AVALANCHES
MOUTH WATERING & G/F

INGREDIENTS: 

  • 2 bags of white chocolate chips (I like Nestle & Ghiradelli)
  • 2 bars of Lindt white chocolate (chopped)
  • 6-8 Lindor individually wrapped truffles: white chocolate, milk & fudge swirl are great!
  • 1 cup (more or less) of creamy or crunchy peanut butter
  • 1 – 1 ½ cups marshmallows
  • 1-2 cups Rice Krispies
  • 1 cup of chopped pecans (cashews & macadamia nuts are good, too)
  • 1 + cup M&M’s plain
  • ½ + cup M&M’s peanut
  • Mini chocolate chips to decorate the top
  • Mini M&M’s for decorating
  • Sprinkles for decorating the top work, as well!

HOW TO MAKE IT:

  1. In a large glass bowl, combine chocolate chips, chopped white chocolate bars and melt.Stir to combine.  (You can melt the chocolate in the microwave, in short intervals or in a glass bowl over simmering water.   If you use the simmering water – double boiler method- be sure not to let any drops of water get into the bowl of chocolate.  This will cause it to “seize” and become unworkable).
  1. Add peanut butter to the white chocolate & microwave for about 20 seconds.Stir to combine.
  1. Then add the marshmallows, microwave for 25-30 seconds.Stir to combine.
  1. Now, the fun begins:Stir in the rice krispies, pecans, M&M’s (go easy on peanut, since they’re harder to cut through) & plain M&M’s.
  1. Pour into a foil-lined (very lightly sprayed) 13 x 9 inch pan.
  1. Sprinkle the top with mini chocolate chips & mini M’M’s. Pat down lightly with the back of a spoon.
  1. Let “set” up or chill in frig for short time.Lift out of pan & remove foil.   Cut into pieces.
  1. These bars make great gifts.
